Recipe: Passion Fruit Cheesecake

Ingredients:

Crust

  • 6 ounces of graham crackers
  • 8 tablespoons of melted butter

Filling

  • 2 (12 oz) cans of evaporated milk
  • 2 (12 oz) cans of condensed milk
  • 4 passion fruits
  • 2 teaspoons of gelatin powder (previously dissolved in ½ cup of warm water)

Sauce

  • 3 passion fruits
  • ½ cup of sugar

Directions:

For the crust

1.      Add graham crackers to food processor and process until powdered. Add the melted butter and mix well.

2.      Press the cookie mixture into a glass pan.

3.      Bake for 5 minutes until browned. Remove from oven and cool.

For the filling

4.      Add all the ingredients into a blender, and blend until evenly mixed.

5.       Fill the glass pan with this mixture on top of the graham crust, and chill into the refrigerator for at least 4 hours.

For the sauce

6. Reduce everything together in a sauce pan. Cover the cheesecake with this sauce.

Recipe: Turmeric Tonic

turmeric2We love using turmeric in our recipes and here’s why: its root is active and helpful in treating diseases of the skeletal, respiratory and circulatory systems. Turmeric also gives the same benefits as ibuprofen, but without the adverse chemical effects.

 Ingredients:

  • 6 inches of fresh turmeric
  • 5 tablespoons of ginger juice
  • 1 cup of tamarind pulp
  • The juice of 4 limes
  • 1 cup of honey

Directions:

  1. Chop the turmeric into pieces and boil it with 1.5 liters of water. Boil it for 20 minutes.
  2. In a blender, add 1.2 liters of the turmeric water with the pieces of fresh turmeric. Add the tamarind pulp, the lime juice and honey.  Blend everything together.
  3. In a pitcher, add the blended juice and 1.5 liters of fresh water. Add more honey if necessary.

Recipe: Patacones with Mashed Beans, Guacamole and Pico de Gallo

Patacones with Mashed Beans, Guacamole and Pico de Gallo (2 servings)

Patacones with Mashed Beans, Guacamole and Pico de Gallo (2 servings)

Patacones

  • 1 green plantain, cut into 4 cm pieces
  • Oil, just enough to cover half of a pot

Mashed beans

  • 1 cup of mashed beans
  • 1 tbs of onion, chopped
  • ¼ tsp of garlic, chopped
  • ½ tsp of raw sugar
  • ¼ tsp of oregano
  • Salt and pepper to taste

Guacamole

  • 2 Hass avocados, mashed
  • ¼ cup of red onion, chopped
  • The juice of ½ a lime
  • 2 tbs of cilantro, chopped
  • Salt and pepper to taste

Pico de Gallo

  • 1 tomato, diced
  • ¼ cup of red onion, chopped
  • 1 tbs of cilantro, chopped
  • The juice of ½ a lime
  • A splash of olive oil
  • Salt and pepper to taste

Directions:

  1. Mix all the ingredients for the guacamole in a bowl, and set aside.
  2. In another bowl, mix all the ingredients of the pico de gallo. Set aside.
  3. For the mashed beans, add a splash of oil to a sauce pan and sauté the onions. Then add the garlic, sugar and oregano. Mix well and add the mashed beans, salt and pepper to taste.
  4. In a pot, heat the oil to make the patacones. This should not be very hot, so as to not burn the patacones. Add the plantain pieces and let it brown slowly for a few minutes. Remove the patacones and place them on a plate. Then use a glass or dish to press them to obtain a round, flat shape.
  5. Raise the oil temperature until it bubbles, add the flat patacones and cook until golden brown.
  6. Remove from heat and dry with a paper towel to remove the excess fat. Serve with the mashed beans, guacamole and pico de gallo.
