Recipe: Seabass Ceviche

Seabass Ceviche (6 servings)

  • 6 servings
  • 5 fillets of sea bass, diced into medium squares
  • 4 tablespoons of cilantro, chopped
  • ½  cup of red onion, chopped
  • ½  bell pepper finely chopped.
  • 1  garlic clove, grated
  • The juice of  8 to 10 limes
  • The juice of ½ orange
  • Salt and pepper to taste

Directions:

  1. In a shallow baking pan, add the diced fish with the rest of the ingredients.  Make sure that the juice is enough to just cover the top of the fish
  2. Cover with plastic wrap and place in refrigerator for 3 hours.
  3. To serve, move items into a serving dish on ice to maintain safe food temperatures.

Recipe: Stuffed Avocado with Tropical Salad

Marisol (our lovely and talented chef) is at it again with another simple and tasty recipe to help you enhance your wellness lifestyle!

Stuffed Avocado with Tropical Salad (4 servings)

Ingredients:

  •  1 ½ cup of wild rice (cooked)
  •  ½ cup of ripe mango, diced into small pieces
  •  ½ cup of cherry tomatoes, diced into small pieces
  •  1/4 cup of red onions, diced
  •  1 tablespoon of cilantro, chopped
  •  Olive oil, lime juice, salt and pepper to taste
  •  2 small avocados (in halves)

Preparation:

  1.  Prepare your favorite mix of wild rice to your liking, and chill.
  2.  Mix the wild rice, with the mango, tomato, onion and cilantro.
  3.  Add the salt, pepper, olive oil and lime juice.
  4.  Stuff the avocados with the salad and serve.

Recipe: Tasty Avocado-Mint Spring Rolls!

This week we will be serving these tasty Avocado-Mint Spring Rolls, which are vegan and gluten free. If you’d like to make them at home, here is the recipe:[/fusion_text][fusion_text]

Avocado-Mint Spring rolls (8 servings)

Ingredients:spring-rolls

  • 8 sheets of rice paper
  • 8 lettuce leaves
  • 1 Avocado, cut in wedges
  • 1 1/2 cup Alfalfa Sprouts
  • Spearmint Leaves

Preparation:

1. Hydrate rice paper in water and place on a board.
2. Fill each roll with a leaf of lettuce, a avocado slice, a handful of alfalfa and spearmint leaves.
3. After wrapping, cut the rolls in half and set aside.

Spicy peanut sauce:

Ingredients:

  • The juice of two oranges
  • 1 tbsp gluten-free soy sauce
  • 3 tbsp peanut butter
  • 1 tbsp of sweet chili sauce

Preparation:

  1. Put all the ingredients together in a blender and blend until homogenized
  2. Dip the rolls into the sauce and enjoy!
