Chickpea stew

Ingredients:

  • 2 cups cooked chickpeas
  • 2 small diced tomatoes
  • 1/2 half chopped onion
  • 2 tbsp chopped celery
  • 2 tbsp chopped sweet chilli
  • 2 tbsp grated carrot
  • 3 cloves garlic, chopped
  • 1 tsp of concentrated tomaet paste
  • 1 tsp of sugar
  • 1 tsp cumin
  • 1 recipe for oregano
  • 1/2 tsp of thyme
  • 1 cup of water
  • Salt and pepper to season
  • 2 tablespoons fresh cilantro

Preparation:

1. Salté with a little oil the onion, celery, sweet pepper and garlic.

2. Then add the carrot, tomatoes, spices, concentrated tomato paste and water. Simmer until a sauce is made.

3. Add the chickpea and simmer all together for 5 minutes

4. Finish with fresh coriander and serve with rice!
